I would with out a doubt label the IT field as a white collar job. The main reasons being 1) I am salaried. 2)I have a four-year college degree and 3) When I go home at night, it is not because I am exhausted physically (although sometimes that is the case), but rather because I am exhausted mentally. A large part of my day is problem solving and programming, which is not very labor intensive physically speaking and never becomes monotonous (except for that whole debugging part - ugh).
My favorite part is when the upper level management frequently come to us to fix problems that do not even fit under our jurisdiction. You just have to love the corporate world.
